I'm enjoying watching videos where people talk through their process while creating an entire track from scratch - anyone got any favourites like that to recommend or one they've done themselves?

Not sure if this is exactly what you were looking for, but here is some stuff that was done with an Arturia MicroFreak ... no blackbox was used though.

There are links in the description to the individual producers and their tracks for more details. I like the one done by Rachel K Collier.
